Holy Mole Guacamole

Guacamole is one of my favourite foods. I love it so much so that sometimes I pass up the chips and pita and eat it straight. Over the years I have mastered my guacamole recipe and have enough confidence to promise that it will be some of the best guac you’ve ever tasted. Now to put my money where my mouth is:
Ingredients
- 2 ripe avocados
- 1 lime
- 1 pinch of sea salt
- 1 squirt of Dijon mustard
- 1 clove of garlic
- Hot sauce and/or fresh chopped jalapeno
- 1 chopped shallot
- 1 splash of olive oil
- 1 splash of balsamic vinegar
- Fresh ground pepper to taste
- 2-3 drops of truffle oil (if you have it)
Directions
Slice avocados in half and scoop avocado meat into mixing bowl. Juice lime on top and stir. Add the rest of the ingredients, stirring continuously to make the avocado soften into a thick creamy spread.
Sometimes I sprinkle cheese on top, but it’s not a must. I never use mayonnaise. Personally, I’m not a big mayo fan, and find that it takes away from the beautifully rich taste of the avocado. The truffle oil is a new-found addition to the recipe, but really works if you have a few drops to spare.

Mustard? Olive oil? Balsamic vinegar? Truffle oil? I don’t think it’s guacamole you’re making here.
Haha, I know it sounds like a lot of frills. But it really is amazing!
Not down with tomatoes? cumin?
I don’t love tomatoes in the guac. It’s not bad, just not my favourite. And yes, cumin is amazing if you have it on hand (and hopefully you always do), it can go a long way in bringing together the flavours!
Mexican here! I bet this is amazing but it isn’t the traditional guac recipe that was passed to me from my fasha. I’m telling you alls you need is a bunch of avocados, limes, garlic, salt onion and tomatoes. That’s it. Mash them avocados, add some salt, squeeze the lime juice in, dice up them tomatoes and onion throw it in and add the juice from dicing. Keep tasting it until it’s perfect. keep adding each ingredient until perfect. You can spice it up w/ some jalepeno (I don’t) or add some cilantro (i don’t). I do want to try this recipe, though!
Do ya chop that clove of garlic, or what? Raw or cooked? Or do you top the finished guac with a little garlic garnish
I chop the garlic and mix it in when I’m making it. But throwing a little extra on top sounds great! I love garlic, breath and all
